<p>似乎很多香港人都對「乾炒牛河」有種情意結，正所謂由細食到大，對我來說亦一樣，但自從做營養師後，我對這個菜式真係又愛又恨。對於 keep fit 的我, 間中吃一次絕對無問題，不影響磅數，又不影響脂肪比例 (只要另一餐清淡一點就可以)，但對於減磅中的大家，只要吃了乾炒牛河，脂肪比例隨時即日升(不跌反升)! 為了可以令大家開心地減磅 (減脂肪)，可以滿足媽媽又可以滿足小朋友的口腹之慾，特別跟退休酒店大廚袁師傅一起創作了這個「低脂低鹽乾炒牛河」。</p>

<p>材料:<br />牛肉 (肉眼牛柳) 1/2斤 (約300克)<br />河粉(乾) 1/2包 (約225克)<br />洋蔥 1/2個<br />蔥段 1棵<br />銀芽 2両(約80克)</p>



<p>醃料:<br />奇異果(去皮) 1/2個<br />黃糖 1/2茶匙<br />生抽 1茶匙<br />生粉 1茶匙<br />紹興酒 1茶匙<br />水 1湯匙</p>



<p>調味料:<br />生抽 1茶匙<br />老抽 1湯匙<br />黃糖 1/2茶匙</p>



<p>做法:</p>



<ol class="wp-block-list">
<li>首先將奇異果直接放在濾網上，用湯匙按壓，濾出奇異果汁。</li>
<li>將牛肉洗凈，橫紋切薄片，加入醃料醃約15分鐘，備用。</li>
<li>將乾河粉加入80℃暖水浸約 15-20分鐘(或至較軟身)。</li>
<li>在燒熱的易潔鑊加入1茶匙油，將牛肉鋪平在鑊上面，不要重疊，以中大火煎牛肉兩面至轉色，盛起備用。</li>
<li>然後盛起河粉，瀝乾水份，在同一鑊中加入1茶匙油，加入河粉煎炒1至2分鐘。</li>
<li>之後放入已切絲的洋蔥及蔥段，略煎炒1至2分鐘。</li>
<li>再加入銀芽和牛肉。</li>
<li>最後加入調味料，炒3分鐘至乾身，即成。</li>
</ol>

<li>若發現牛肉比較韌，醃肉時可加入奇異果汁(沒有果肉及籽的會令餸菜較靚)。原理是奇異果、菠蘿及木瓜等都含有分解蛋白質分子的酶，這些蛋白質經分解後，會令肉質變得鬆軟。</li>
