<p>日常我們皮膚受紫外線照射，令我們產生自由基，皮膚因而受傷害。美國註冊營養師詹佩鳳今次便向大家介紹一道低脂健康兼護膚的炒飯食譜，食譜特別加入番茄，因為蕃茄含有茄紅素，當中的天然抗氧化物會對付自由基，有助抗衰老及維持皮膚健康，而番茄與植物油一同加熱後，會釋出更多茄紅素。一眾上班族帶飯做午餐時，又多了一個又快又好食的選擇。</p>

雞肉 200克<br />
雞蛋 1隻<br />
冷飯 3碗<br />
菜心 4棵<br />
蕃茄 1個<br />
蔥 2棵</p>
<p>調味料：<br />
鹽 1茶匙<br />
黃糖 1/3茶匙</p>

<p>做法：</p>
<p>1. 先將菜心、蔥和雞肉洗淨切粒；</p>
<p>2. 雞肉加鹽和糖醃10分鐘，然後煎約3分鐘至熟透；</p>
<p>3. 在易潔鑊中加1茶匙油，先加雞蛋略炒然後加入冷飯；</p>
<p>4. 加入雞肉略炒然後加入調味料、菜心、蕃茄和蔥花，炒至乾身便完成。</p>
