<p>新年想應節，整下年糕，既然整，梗係整D特別又靚架啦～由於我有好多要求，要無人造色素、低糖、低脂，仲要好味，賣相吸引，所以要出營養師嘅絕招：食譜調整 （recipe modifications）！減緊肥都可以食架～下午茶時間，一條啱啱好！</p>
<p>一條低脂「錦鯉年糕」:</p>
<ul>
<li>142卡路里</li>
<li>4克脂肪</li>
<li>1茶匙糖</li>
</ul>
<p>相比一隻蛋撻（200卡路里、11克脂肪、2茶匙糖），其實自製「錦鯉年糕」係健康架~</p>

<p>材料（10厘米長的錦鯉3條）：</p>
<ul>
<li>糯米粉45克</li>
<li>澄麵10克</li>
<li>椰漿70毫升</li>
<li>砂糖15克</li>
<li>紅糖3克</li>
<li>甘筍汁1湯匙（可加減調較自己喜好的顏色深淺）</li>
<li>黑芝麻（點睛）4粒</li>

<p>用具：迷你錦鯉耐熱塑膠模</p>

<p>做法:</p>
<ol>
<li>將糯米粉及澄麵略拌，過篩兩次，分成50 及 5 克兩份的「粉」, 備用.</li>
</ol>
<p>白色年糕:</p>
<ol start="2">
<li>在鍋內加入63毫升椰漿及砂糖, 以慢火, 邊攪拌, 待煮溶, 熄火. 慢慢拌入5 0克的「粉」, 拌勻 , 直至幼滑, 取出, 備用。</li>

<p>橙紅色年糕:</p>
<ol start="3">
<li>在鍋內加入7毫升椰漿及紅糖, 以慢火, 邊攪拌, 煮溶, 熄火. 慢慢拌入5 克的「粉」, 拌勻 , 直至幼滑, 取出, 備用。</li>

<li>在錦鯉模上塗一層薄薄的油，先加入橙紅色年糕,  再加入白色年糕至九分滿。</li>
<li>將錦鯉模放在碟上，蓋上錫紙，水滾後以大火蒸20分鐘，取出放涼約5分鐘，脫模，再以黑芝麻點睛，即成！＜營養師 Katrina 小貼士＞
<ol>
<li>在街外買的錦鯉年糕一般都是用色素做橙紅色的部份，但其實可以用甘筍汁代替，讓大人小朋友吃得更健康！</li>
<li>從魚尾開始脫模會較容易。</li>
<li>冷藏後年糕會變硬，可再蒸熱才食用。</li>
</ol>
