										<content:encoded><![CDATA[<p>新年想應節, 整下年糕, 既然整, 梗係整D特別又靚架啦~~ 由於我有好多要求, 要無人造色素、低糖、低脂，仲要好味，賣相吸引，所以要出營養師嘅絕招: 食譜調整 (recipe modifications)! 減緊肥都可以食架~ (下午茶時間, 一條啱啱好~ )</p>
<p>一條低脂「錦鯉年糕」:</p>
<p>142卡路里</p>
<p>4克脂肪</p>
<p>1茶匙糖</p>
<p>&gt;&gt;&gt; 相比一隻蛋撻 (200卡路里, 11克脂肪, 2茶匙糖), 其實自製「錦鯉年糕」係健康架~</p>

<p style="font-weight: 400;">材料 (10厘米長的錦鯉3條):</p>
<p style="font-weight: 400;">糯米粉45克</p>
<p style="font-weight: 400;">澄麵10克</p>
<p style="font-weight: 400;">椰漿70毫升</p>
<p style="font-weight: 400;">砂糖15克</p>
<p style="font-weight: 400;">紅糖3克</p>
<p style="font-weight: 400;">甘筍汁1湯匙 (可加減調較自己喜好的顏色深淺)</p>
<p style="font-weight: 400;">黑芝麻 (點睛) 4粒</p>
<p style="font-weight: 400;">用具: 迷你錦鯉耐熱塑膠模</p>

<ol>
<li style="font-weight: 400;">將糯米粉及澄麵略拌，過篩兩次，分成50 及 5 克兩份的「粉」, 備用.</li>
</ol>
<p style="font-weight: 400;"><strong>白色年糕</strong><strong>:</strong></p>
<ol start="2">
<li style="font-weight: 400;">在鍋內加入63毫升椰漿及砂糖, 以慢火, 邊攪拌, 待煮溶, 熄火. 慢慢拌入5 0克的「粉」, 拌勻 , 直至幼滑, 取出, 備用。</li>

<li style="font-weight: 400;">在鍋內加入7毫升椰漿及紅糖, 以慢火, 邊攪拌, 煮溶, 熄火. 慢慢拌入5 克的「粉」, 拌勻 , 直至幼滑, 取出, 備用。</li>

<li style="font-weight: 400;">在錦鯉模上塗一層薄薄的油，先加入<strong>橙紅色年糕</strong><strong>, </strong> 再加入白色年糕至九分滿。</li>

<p><span lang="EN-US">5. </span>將錦鯉模放在碟上，蓋上錫紙，水滾後以大火蒸<span lang="EN-US"> 20 </span>分鐘，取出放涼約<span lang="EN-US"> 5 </span>分鐘，脫模，再以黑芝麻點睛，即成<span lang="EN-US">!</span></p>

<li style="font-weight: 400;">在街外買的錦鯉年糕一般都是用色素做橙紅色的部份, 但其實可以用甘筍汁代替, 讓大人小朋友吃得更健康!</li>
<li style="font-weight: 400;">從魚尾開始脫模會較容易.</li>
<li style="font-weight: 400;">冷藏後年糕會變硬，可再蒸熱才食用.</li>
